Vanilla beans... the seed pods of Vanilla fragrans, also known as Vanilla beans,
are the source of vanilla essence or flavouring, not the flowers. The vanillin compound is
extracted from Vanilla beans that had been fermented, cured and dried... a process
that can take up to five months. The beans are harvested just before they ripen, after
they have attained a length of about 20cm. In this photo, two such beans (right) can be seen
together with young seed pods and flower buds.
